Our Approach to Food

We believe the best meals are honest ones. That means sourcing ingredients we’re proud of, preparing them with care, and not overcomplicating what doesn’t need to be complicated. Spanish cuisine has always understood this. A perfect tortilla española requires three ingredients and thirty minutes of patience. Gambas al ajillo is essentially garlic, olive oil, and heat — and yet it is one of the most satisfying things you can eat.

Our kitchen works from that same principle. Quality in, quality out. Technique in service of flavor, not in place of it.

Seasonal availability shapes what appears on the menu. When something is at its peak — a local catch, a regional produce item, a fresh hop harvest — we build around it. When it’s gone, it’s gone. That’s not a limitation; it’s the point.

Our Approach to Beer

Every beer on our list is chosen because it belongs there. Whether brewed in-house or selected from producers whose work we genuinely admire, the standard is the same: it has to be excellent in the glass and thoughtful in its construction.

We take the food-and-beer pairing seriously. The same way a sommelier thinks about what a wine brings to a dish, we think about what a beer brings to a meal. Carbonation, bitterness, malt sweetness, body, aroma — all of it interacts with food in ways that reward attention.

  • Wine & Spirits: A focused selection chosen to complement the food. Spanish varietals feature prominently, for obvious reasons.
  • Non-Alcoholic: Thoughtfully chosen options that are worth ordering in their own right — not an afterthought.
